- ▸2 g ground coriander (≈ 1 tsp)

- ▸100 g Chinese mustard greens (sawi hijau) (rough chop)
- ▸100 g cabbage (thinly sliced)
- ▸1 pcs tomato (sliced)

Seasoning & Garnishes
- ▸60 ml sweet soy sauce (kecap manis) (≈ 4 tbsp)
- ▸15 ml oyster sauce (≈ 1 tbsp)
- ▸5 g salt (≈ 1 tsp)
- ▸1 g ground white pepper (≈ ¼ tsp)
- ▸45 ml cooking oil (≈ 3 tbsp)
Instructions
- 1Boil egg noodles in salted water for 3-4 minutes until al dente. Drain, rinse with cold water, toss with a little oil to prevent sticking. Set aside.
- 2Blend the spice paste (shallots, garlic, dry-roasted candlenuts, chilies, coriander). Slice the vegetables (mustard greens, cabbage, tomato, scallions).
- 3Heat oil in a wok and sauté the spice paste until fragrant and cooked through (5-7 minutes). Add white parts of scallions.
- 4Push paste to one side, pour beaten eggs on the empty side and scramble. Stir together with paste.
- 5Add shredded chicken, stir-fry for 2 minutes until coated with paste.
- 6Add cabbage and mustard greens, stir-fry 1 minute until just wilted (don't overcook).
- 7Add the noodles, sweet soy, oyster sauce, salt, and pepper. Toss quickly on high heat for 2-3 minutes until evenly mixed.
- 8Add tomato slices and green parts of scallions at the end. Serve hot with prawn crackers, pickles, and lime wedge.
