Main Ingredient

  • 500 g noodles fresh egg noodles (yellow)

Spice Paste

  • 50 g shallots (≈ 5 cloves)
  • 15 g garlic (≈ 3 cloves)
  • 12 g candlenuts (≈ 3 pieces, dry-roasted)
  • 30 g red curly chilies (≈ 5 pieces)
  • 2 g ground coriander (≈ 1 tsp)

Whole Spices & Aromatics

  • 2 pcs eggs
  • 200 g shredded chicken
  • 100 g Chinese mustard greens (sawi hijau) (rough chop)
  • 100 g cabbage (thinly sliced)
  • 1 pcs tomato (sliced)
  • 2 stalks scallions

Seasoning & Garnishes

  • 60 ml sweet soy sauce (kecap manis) (≈ 4 tbsp)
  • 15 ml oyster sauce (≈ 1 tbsp)
  • 5 g salt (≈ 1 tsp)
  • 1 g ground white pepper (≈ ¼ tsp)
  • 45 ml cooking oil (≈ 3 tbsp)

Instructions

    Boil egg noodles in salted water for 3-4 minutes until al dente. Drain, rinse with cold water, toss with a little oil to prevent sticking. Set aside.

    Blend the spice paste (shallots, garlic, dry-roasted candlenuts, chilies, coriander). Slice the vegetables (mustard greens, cabbage, tomato, scallions).

    Heat oil in a wok and sauté the spice paste until fragrant and cooked through (5-7 minutes). Add white parts of scallions.

    Push paste to one side, pour beaten eggs on the empty side and scramble. Stir together with paste.

    Add shredded chicken, stir-fry for 2 minutes until coated with paste.

    Add cabbage and mustard greens, stir-fry 1 minute until just wilted (don't overcook).

    Add the noodles, sweet soy, oyster sauce, salt, and pepper. Toss quickly on high heat for 2-3 minutes until evenly mixed.
