Why Density-Based Charts?

Generic conversion charts (1 tbsp = 15 g) are often inaccurate because each ingredient has a different density. Our charts use ingredient-specific densities (sugar 0.85 g/ml, flour 0.5 g/ml, salt 1.2 g/ml), validated against USDA FoodData Central, King Arthur Baking, and FDA standards — see our data methodology for details.
