  • 1 batang Lemongrass
  • 2 lembar Bay leaves
  • 3 lembar Kaffir lime leaves
  • 2 cm Galangal

Liquids

  • 2000 ml Water (for boiling chicken)

Seasoning & Garnishes

  • 10 g Salt (≈ 2 tsp)
  • 0.5 sdt Ground pepper
  • 4 g Sugar (≈ 1 tsp)

Instructions

    Boil chicken in water with bruised ginger for 30-40 minutes until tender. Remove chicken, shred. Strain the broth.

    Blend the spice paste (shallots, garlic, candlenuts, turmeric), then sauté with lemongrass, salam leaves, and kaffir lime leaves until fragrant.

    Pour the spice mixture into the chicken broth. Bring to a boil over medium heat.

    Taste and add salt, sugar, and pepper to balance. Simmer 10 more minutes to let flavors meld.
